GOT MILK : Biscuit layer pudding

Pudding most often refers to a dessert, but can also refer to a savory dish in some dialects.
In the United Kingdom and some Commonwealth countries, pudding refers to rich, fairly homogeneous starch- or dairy-based desserts (e.g. rice pudding, Christmas pudding), or, informally, is used to refer to any dessert. The word is also used for fairly homogeneous encased savory dishes, e.g. black pudding, suet pudding.
In the U.S., pudding denotes a sweet milk-based dessert similar in consistency to egg-based custards as well as to more traditional puddings such as bread pudding or rice pudding.

In our country (Indonesia), pudding often refers to cold dessert using milk, coconut milk, with agar-agar or jelly. I read my recipe book about this pudding, and wanna try this out using my homemade oreo.


Puding oreo

My adorable friend of mine, mba Arfi, told us about this event. For me, breastfeeding is an important thing to do by every mother. It was almost 8 years ago, starting early in my first semester of pregnancy, I decided to breastfeeding my baby exclusively. Since our goverment campaign to breastfeeding for 6 month exclusively then continue until 2 year, I really support and Thanks God I did it.




This is my entry for Got Milk, hosted by Linda Kovacevic of Make Life Sweeter!. I write the recipe in Indonesian and English version.

Puding Lapis Biskuit
Sumber : Primarasa, Kreasi Puding

Bahan
40 keping biskuit oreo/biskuit coklat tanpa isi
20 lembar plastik mika
500 ml susu cair
1 bungkus (7gr) agar-agar bubuk putih
125 gr gula pasir
3 kuning telur, kocok
1/8 sdt esens rasa jeruk
3 putih telur
2 sdt gula pasir
6 keping biskuit oreo, cincang kasar
Coklat serut untuk taburan

Saus coklat
250 ml krim kental
125 gr dark cooking chocolate, cincang

Cara membuat
1. Ambil 1 keping biskuit oreo, taruh diatas talenan atau meja datar. Lingkarkan selembar plastik mika pada biskuit hingga mika membentuk tabung, rekatkan sambungannya dengan pita perekat. Kerjakan untuk semua bahan hingga habis.
2. Campur susu, agar-agar, dan gula dalam panci, aduk hingga agar-agar larut. Jerangkan di atas api sedang, aduk-aduk hingga mendidih dan gula larut, kecilkan apinya. Ambil ± 2 sdm adonan agar-agar, masukkan ke dalam kuning telur kocok, aduk rata. Tuang ke dalam pnanci agar-agar, aduk cepat, matikan apinya. Masukkan esens jeruk, aduk rata.
3. Kocok putih telur bersama gula pasir hingga kaku dalam wadah cekung, madukkan adonan agar-agar yang masih panas sedikit demi sedikit sambil dikocok menggunakan mikser berkecepatan rendah hingga rata, angkat miksernya. Masukkan biskuit cincang ke dalamnya, aduk rata.
4. Atur tabung mika berisi biskuit di datas loyang datar, masukkan adonan agar ke dalamnya hingga setengah penuh, sisihkan hingga adonan setengah mengeras. Jaga agar adonan tetap cair dengan merencamnya dalam panci berisi air panas.
5. Taruh 1 keping biskuit oreo di atasnya, tuang lagi adonan agar-agar di atasnya hingga mika penuh. Taburi permukaannya dengan coklat serut, sisihkan hingga mengeras. Sajikan dengan saus coklat.

Saus coklat : panaskan krim kental hingga hampir mendidih, angkat. Campur bersama cokelat cincang, aduk hingga cokelat meleleh dan tercampur rata.


Puding oreo


English version :
40 pieces plain oreo biscuits / chocolate biscuits
20 sheets of hard plastic
500 ml milk
7 gram white agar-agar powder
125 gram sugar
3 egg yolks, whisk
1/8 teaspoon orange essense
3 egg whites
2 teaspoon sugar
6 pieces biscuits, chopped
Chocolate for sowing

Make 20 cilinders shaped from the plastic sheet based on biscuit’s diameter. Set aside.
Place the milk, agar-agar powder dan sugar in a saucepan and bring to the boil. Reduce the heat to a shimmer, stir well.
Take 2 tablespoon of agar-agar mixture to egg yolks, stir, then pour back into the pan. Stir fast and turn off the heat.
Add orange essence, stir well to mix
Whisk egg whites with sugar until soft peak. Add hot agar-agar mixture, mix well with a lowest speed. Add chopped biscuit, stir well.

On a tray, arrange palstic tubes with biscuit at the base. Add agar-agar mixture until half full, cover with another biscuit, and add agar-agar mixture again until full.
Refrigerate until firm.
Serve with chocolate sauce

Chocolate sauce: Pour the cream into a saucepan and heat gently. When the cream comes to the boil remove the pan from the heat. Stir in the chopped chocolate and keep stirring until the sauce is smooth.
