Coffee and Almond Slice

Coffee and Almond Slice

Ingredients :
125 gr butter
¾ cup caster sugar
1 teaspoon vanilla essence
2 eggs, lightly beaten
1 tablespoon instant coffee
1 ½ cups plain flour
1 cup ground almond, firmly packed
½ cup desiccated coconut

Coffee butter icing :
60 gr butter
1 cup icing sugar
2 teaspoons instant coffee
2/3 cup flaked almonds, lightly toasted

Preheat the oven to moderate 180°C. Line a lightly greased, 18x28 cm shallow tin with non-stick baking paper, over-hanging two opposite sides.
Beat the butter, sugar and vanilla with electric beaters until light and creamy. Gradually add the eggs, beating well after each addition. Dissolve the coffee in a tablespoon of hot water and beat into the mixture.
Sift the flour and mix with the ground almonds and coconut. Fold into the egg and butter mixture in batches, using a metal spoon. Stir until smooth and just combined.
Spread the mixture into the tin and smooth the surface. Bake for 25-30 minutes, or until cooked when tested with a skewer. Cool in the tin.
To make the icing, beat the butter with electric beater untul creamy. Dissolve the coffee in a little hot water. Sift the icing sugar and add to the butter gradually, with the dissolved coffee. Spread the icing over the slice and sprinkle with almonds. Cut into pieces to serve.
